Beach Time

I love the reset my body gets from the beach!  The salty air does wonders for my sinuses and makes me feel clean again. 

On the first of September, a beautiful Sunday afternoon, we took the whole family to the beach.  The clouds were amazing, we had a few passing over light rain showers – we love watching the cloud of “murkiness” slowly approach, hover, and pass us.  My littlest love is too tiny for rough waves just yet.  She’s good at crawling in the sand. 

Louis was monitoring the approaching storm from his phone.

I like to leave all technology somewhere else.  I know that means I seldom take pictures, but I’ve learned I’m more likely to enjoy the experience if I’m not tied to a phone, keys, or wallet. Usually, one of the girls now takes plenty of pictures!  Louis didn’t want to get wet at all this round so I did go out twice.  Thea doesn’t cling to me like Lucas used to so I haven’t attempted baby-surfing with her yet.  Lucas jumped on my back for two rides before he took off to dig a giant hole with the girls.

They got this hole so big Lucas could stand in it!

Kimberly and Jaquline were quite excited about it.  Like good little beach-goers, they demoed the elaborate sand castle creation Lucas and Kimberly had made back into the hole as we left.  Becky always reminds them to put everything back.  We usually clean up any trash lying about, but this time there was nothing to take back to the garbage bins. (Our beach is generally clean, which makes me feel good about our community!)

Waves, water, sand, and beautiful skies… perfect beach day!  I love the amazing tapestries painted in the beach landscapes, don’t you?

Movie Thoughts: Knowing

The other night we had a movie night.  This had to be something mostly family friendly because everyone was awake.  Yes, even Thea was awake, but I’m sure she wasn’t paying attention to the movie just yet.

See, maybe because I’m old, or a morning person, or was exhausted from the work week, or… I’ll figure out an excuse later… short of it is, I go to sleep early.  Okay, earlier than my teens… okay, even earlier than my almost-teen.  My husband works late.  He is a night-owl.  So they usually watch anything that has too much blood, bad words, or unsafe-for-little-people-stuff after I’m asleep.

SO… queue the air-popped popcorn with yummy butter and salt, some fresh-cut potato French Fries and Sweet Potato Fries, and lemonade… the movie was on.

We watched Nicholas Cage in “Knowing.”

Louis said it was a horror film.  (I asked if he had lost his marbles… I wanted the little ones to sleep in their beds!)   Honestly, I think this designation was to entice the teens to watch it with us.

Oh my goodness.  What a strange, twisting, amazing movie.

**SPOILER ALERT**

If you want to watch the movie without knowing all the twists, stop reading now and go borrow it from the library.  Seriously, this is worth the watch.  We will likely watch it again.

The story acts like a psychological thriller.  Strange dark-cloaked “apparitions” aka “ghosts” aka “spirits” appear and disappear through the 50 years of time reflected in the film.  “Whispers,” as the affected children call the voices in their heads, keep relaying numerical information and give visions to the children after the dark-cloaked strangers give them an otherworldly rock.

Dad (Nicholas Cage) is a grieving widower astrophysicist pastor’s son who has turned his on faith and believes, as he tells his students, that the universe is a collection of haphazard mistakes and there is nothing but chaos.  He drowns his hopeless unbelief in a variety of alcoholic beverages to self-medicate his depression.

The son is hard of hearing (wears a hearing aid) and deeply misses his mother and the happiness that lived in his home before her death.  He happens to be given a message from the first child (written 50 years ago and locked in a time capsule at her/his school) that is a sheet of apparently random numbers.

But the numbers aren’t random.  They are the date (in short form) of a catastrophe and the number of people who died from it… and the “unknown” digits following (which if you have been listening to a Civil Air Patrol Chief talking about orienteering and navigation by GPS, you see that these same length “unknown” numbers are latitude and longitude).

What clenches it for Dad is when he finds the date of his wife’s death (a fire that claimed many) as one of the catastrophes in this list.  He realizes this message is personally meant for his family.  Now he launches into investigation to find out who wrote the message, where she is, why she wrote it, and to find the connection to his family.

Symbolism begins to appear here as the audience starts figuring out the story.  The first hint for me was the fire vision with the animals fleeing but nowhere to go.  (Destroy the Earth by fire.)  The dark-cloaked strangers have shielded eyes but bright faces.  (How would you hide glory unless shielded by darkness yet there’s still light in their faces?)  This is revealed at the very end with the darkness falling away and now they are bright, amazing beings.  (And the viewer whispers, “every time a person sees an angel, they have to say “fear not,” no wonder!”)

When “EE” is revealed to be “Everyone Else” the title is explained.  Now, they know.

At the end sequence, notice the “Pearly Gates,” “streets of gold,” “white linen garments,” and other symbolism played out – how they make it come to life is pure amazement.  Everything is explained in such a unique way.

This movie is rated PG (likely for the alcohol and “disturbing images”).  It’s actually very well put together.  The storyline seems fractured but falls into place and you wonder how you missed it.

Pineapple

Pineapple

One of our favorite fruits is the pineapple.

The best of the best is fresh cut.  (We will get them straight off our bushes someday!)

Pineapple is great with pork, in oriental dishes, on pizza, in a cake, in muffins, or just plain and juicy sweet.

Up until a few months ago, I’d never cut a fresh pineapple!  It’s really easy if your kids are like mine and want to eat as close to the rind as possible.  My mom cuts the rind off and then dices the meat for a no-mess-later snack.

You cut off the top.  (Be sure to leave a little meat so you can plant the top in a sunny spot and a year later you’ll have more pineapples!)

You cut off the base.  (My kids call it the butt because the pineapple sits on it.)

Now stand the pineapple up and slice through it from top to bottom in two or three cuts.  I always use three because I like narrower bites for small-child mouths to make less of a mess.  Lay these four or six strips flat and slice into wedges.  They will look like pizza slices.  The yellow pineapple meat is pretending to be the cheese and the rind is being the crust.

And voila!  Easy treat to grab and eat!  Our chickens love pineapple rinds.  Prim always thinks she wants them when we are cutting, but that’s just because we have the cutting board out and she thinks she’s a human.

Pineapple is loaded with vitamins and minerals needed for healthy bodies.  It has an enzyme called bromelain that is anti-inflammatory and helps sooth coughing too.  For the calories (82 per cup), pineapple is considered nutrient dense and low sugar.  One cup of fresh pineapple has about 180mg potassium, 2g dietary fiber, 0.6g protein, 0.7% Vitamin A, 40% Vitamin C, 6.7% Vitamin B6, as well as copper, iron, folate, magnesium, thiamin, niacin, and 130% daily value of manganese!  (Among others, check it out!)

So, for a healthy, easy snack that tastes great, try some fresh pineapple!  (Just watch out for the “burn” you can get on your lips after a few slices.)

Fun facts:

Did you know that adding a little salt to pineapple makes it taste sweeter?  Just not too much!

The pineapple is technically a berry!  It is formed by several flowers fruiting together at the core (the hard central “Stem” through the middle of the pineapple) and fusing together into the soft, yellow meat of a single fruit per stalk.

The core and rind are edible!  The core can be too tough to eat in an unripe pineapple.  The rind is traditionally used to make a fermented drink!
