Thanksgiving Week 2022

We hosted Thanksgiving at our house for those who could come.  It lasted from November 22 (our 20th anniversary) to November 27 (Sunday).  This was our “vacation” from gym/work.  It included lots of traveling (for me, Becky, Christina, Jaquline, Lucas, and Thea), lots of fun, and lots of food!

For my anniversary, we still had to work (thank you, Hurricane Whatever in September – I don’t commit names to memory) because we had school and a make-up day at gymnastics.  This started our Thanksgiving Break because I started out just before midnight on 11/22 with Christina to go pick Becky up from college.  

This car trip was super fun!  Christina and I drove.  Lucas and Thea went with us as Kimberly had early practice (Xcel Platinum) on the 23rd (a friend played taxi), Louis still had work like regular, and Jaquline & Jillian were cleaning and cooking with Grandma Tina.  

We got home to take naps, help finish cooking, cleaning, and such.   The table was set so pretty! (Yes, that is a marble chessboard that we use as a hot plate to set the turkey on!Louis had it when we were dating and after some “accidents” happened to the pieces over the years, it was just too pretty to toss so was repurposed.)

Uncle Buddy came.  Anastasia came.  Gavin came.  Aunt Becca sent yummy desserts! We had so much fun!  Louis brought in new chairs.  (our table was used when we bought it and was missing chairs – we originally used the piano bench, but since the piano & bench are in storage for lack of room…) We played games.  Okay, yes, most were group video games or Frogger Challenge (two players, winner takes on next player…), but there were a few Boggle games and it seems we can’t have Thanksgiving fun without a campfire!

Uncle Buddy wanted to play Age of Empires with Lucas & Becky; even Louis and I joined in on a 5-person hot-seat Heroes 3 game that lasted all day (and we didn’t finish).  The kiddos (will leave anonymous which adults joined in as well) did a super-multi-player Minecraft / Imposter with phones and computers.  The shouted directions in the living and dining room had everyone else laughing! 

My Angel Eggs were a different story.  I made two platters.  I love making food look beautiful but most of the time we are short on time so I can’t.  (I used to even make everyone’s birthday cakes from scratch & even made two wedding cakes!)  Today I made beautiful piped eggs. 

One platter was gone in T-5 minutes!  Jaquline did warn us she was going to eat more than the eggs she shelled!  I love making food people enjoy.  

Being around my family when we aren’t rushed always reminds me to be thankful for them!  Uncle Buddy had prepped his head for military service (more on that next time) and Lucas thoroughly enjoyed playing video games with and snuggling with his uncle.  I am super thankful for this life God has given me and I pray my home becomes the gathering point for family and friends always on any Sunday we have family day or any holiday.  Food and good company is always a reason to gather together!

A Good Morning

A Good Morning

One of the neatest things about working lately has been the amazing cuisine at my house!  Louis has this amazing talent for cooking.  Anything he touches is amazing.

One morning this past week, when Louis came in from work, he couldn’t sleep so he made the most amazing breakfast… I chatted with him as I nursed Thea and he rolled out dough.  We could already smell the amazing cinnamon and butter.

The warm aroma wafting from a giant pan of cinnamon rolls woke everyone!

Louis’ alarm went off as the girls started hopping into the kitchen.  (His alarm is epic, it’s Mandisa’s “Good Morning!”)

Warm, yummy food, laughing, smiling company, and fun, encouraging music made an excellent start to an amazing day!

Happiness Is…

When you close your eyes and see happiness, what do you see?

Happiness Is…

Each of us has a different view of happiness.  This is because we are all unique individuals with varying dreams, passions, interests, and desires!  Try this exercise:

Close your eyes.  Take a deep breath.  Think of the word, “happiness.”  What do you see?

For me, happiness is:

…Lucas racing his bike around the yard (he LOVES that bicycle)

…a clear bright blue Florida sky (hopefully with ocean sounds in my ears!)

…playing chef or chef’s assistant in the kitchen with family or friends with happy music playing (I LOVE the community feeling when there are two or more of us cooking together.)

…the sound of the waves, the feel of squishy sand, the salty sea smell (for perfection, add a surfboard.)

…the smell of sweet hay, the sound of farm animals, the sight of abundant fruit on trees and in a garden

…a bright, open, cheery home with a sanctuary for visiting relatives (Grandma suite, anyone?)

…every time I picture this perfection in my mind, I see my family.  Family, friends, community; living life together.  This is what I picture as happiness.

I often imagine heaven as a huge garden, overflowing with life, where all of us spend quality time with each other tending the animals and plants as we were designed to do (okay, I know that’s simple and I’m ignoring the obvious awesomeness of actually seeing Jesus in glory, but you know, I can dream.)  Happiness for me is being with my family.

A wise man said, “be sure if you join yourself to someone, they see happiness the same way you do.”

Another, “you can’t change someone, they are the only one who can choose to change themselves.”

Remember that you cannot be happy trying to force someone else into a mold you see.  Enjoy them as they are.  (We all have flaws, no one is perfect, and everyone is uniquely different!)  Don’t try to change others, just allow them to be who they are.  (A friend pointed out to me once that no one in the “Pooh-Bear” books “unfriend” Eeyore because he’s gloomy; they accept him as he is.)

When you close your eyes and see happiness, whom do you see with you?  Those are the ones you love.  That is what you treasure.  Cherish time with those who make you happy.

Grill Smell

How excited I get when I smell the grill – aka Louis cooking!

Grill Smell

Oh. My. Goodness!

I smell… I smell… (no, it’s not Ducky) I smell charcoal and lighter fluid!

This means Louis is on the grill.  AKA we are getting the most awesome lunch/dinner today!

Louis’ Dad cooked for a restaurant as a young man, his Grandma taught his mom who taught the boys how to make amazing Florida foods, and he cooked for a busy buffet and a 4-star restaurant.  His food is good.

It’s like when Becky (my 12 year old) says, “Mom, I’m doing lunch,” and everyone is like “awesome, so how can I help?” or we just get out of the way and let her magic happen.  She throws junk together without a recipe and comes up with delectable food.

Louis does this on the grill.

So, I’m like, beans, potatoes?  What sides do you want?

Louis doesn’t care; it’s all about the meat for him.  (Is that just a guy thing?  Nope, Becky doesn’t care too much about sides either, she focuses on the meat and lets creativity flow when it comes to “the sauce.”)

So, baked sweet potatoes, potato salad, and peas make up today’s yummy sides. (Canned peas were only 2.12 for a 6lb can from Sams, Aldi had sweet potatoes 6lbs for $2.00, and Currie’s local Sebago potatoes were $0.50/lb – I cook based on what’s on sale.)

Lighter fluid smell is extinguished – by looking at the coals you’d think they are dead.  Nope.  Just right to start.

T minus 10 minutes!  My stomach is aching!  I practically live outside now because of the mold/breathing issue, so I make up sides, set them out (peas on the stove, salad in the fridge, and sweeties hang out in the microwave), and go outside to wait on the best part.  I’m pretending to trim my elephant ears but this smell is exciting my palate!

I think every dog in the county can smell the meat cooking – do I care what it is?  Nope.  It will be yummy.

Is there any kitchen smell that is better than the grill?  Nope.  Okay, maybe a wood-fire camp circle with egg casserole cooked on a cold morning in a cast iron skillet with the hot chocolate tureen on the side – Yes, that might top grilled everyday meat, but just maybe…

Bulk Canning

Bulk Canning

Four hours of simmering marinara and the house smells like Italian spices!  Oregano, sweet basil, flowery parsley, smooth garlic, marjoram, sage, thyme, onion, and rosemary flavors blend together with a yummy tomato base to make five gallons of nearly meatless red sauce (nearly, because we use one pound of finely ground meat for flavor).  This is a family cupboard staple.  We use our marinara for lasagna, in soup, for rice dishes, and our favorite way – as spaghetti sauce!

One pound of any noodle + one quart of marinara + a handful of meatballs = yummy spaghetti!

This cooks in the time it takes to boil noodles (usually 15 minutes) so it’s a fast meal.

We started making our healthy bulk marinara about 15 years ago.  First we experimented with small batches for taste.  When we got taste down, we started making full canning-pot batches. (Our canning pot holds 5.5 gallons, but we leave space for stirring, so each “batch” is 5 gallons.)

We spend about 4 or 5 hours canning and processing for one batch of chili or marinara.  But after one batch, we have jars for 10 to 20 meals.  They are perfect for any busy day.  (Like when I’m trying to finish writing but everyone, including my tummy, is hungry!)

This helps on time and on budget!

Each 32 ounce jar of marinara costs us approximately $0.80 to make.  Our chili is about $2.40 per quart jar.  It is easy on the budget, it’s a taste we love, and we know what’s in it!

Now we bulk cook and process (can) many things: chili (our fully organic, vegetable packed, vitamin-loaded spicy soup), broths from our chickens, grapefruit juice, garden vegetables, and soups.  This gives us healthier options with fast cook times!  Since we can adjust the recipe to our liking, we develop bulk recipes that we love.  (There are a few ratio rules to research and remember when attempting to process soups with heavy starches like rice, corn, and other grains – I keep a booklet with notes.)

Canning can sometimes create funny stories.  For example: once, a little helper scooped out 4 tablespoons of crushed red pepper instead of 4 teaspoons and accidentally created “Dragon-Fire Chili,” which she and Louis loved (however, that has not been duplicated on purpose!).

Canned food is also easy to share!  We once had truckloads of fresh grapefruit.  It took us days to juice the excesses we couldn’t eat.  We canned the juice and had fresh grapefruit juice for almost two years. (And so did most of our family!)  We love to buy mountain apples by the bushel when they are in season and anything not immediately eaten turns into homemade applesauce – one of our favorites!  Overly ripe peaches in the soup-stuff box at the local produce market?  This becomes awesome peach preserves!  Any overage of garden vegetables (like 12 bushels of beets) becomes canned away for a rainy day. (Actually, it was separated into beet greens and beet roots, processed, and opened as a side dish with at least three weekly meals until we ran out!)

Canning also saves us freezer space (we buy whole local beef & pork and save freezer space for Unca ChaCha’s occasional gift of venison).

As with any type of cooking, all the instruments must be clean, food fresh, and preparer(s) maintain a clean working environment.  If you take these precautions and take it slow (plan an entire afternoon or whole day) the first few times, you just may discover that you enjoy this “old way” of processing and storing food.   I love it!
